Make Batter:
Rice Flour mixed with Tumeric -
Thus the
YELLOW EGG like color. It totally makes you think
you are eating an omelet... the texture is similar as
well.  Very mild taste though...not eggy at all.  The
peanuts can be crushed on top of the finished
dish.  (The cabbage head does not go with this
dish.)

    Mix the rice flour and tumeric with
approx. 1 1/2 C WARM  water and 1 cup milk

Add diced green
onion tops and pour
2 scoops of batter
into hot oiled non
stick pan
Swirl to coat -
COVER for approx 45
seconds until edges
start to pull away
from side of pan.
Serve with dipping
sauce of vinegar,
lemon, garlic and
chilis.  She had
already made this.
Add a small handful
of raw bean sprouts
and a small scoop of
your chicken onion
mixture. COVER for
under 1 minute until
bean sprouts are a
little translucent.
Chicken onion (to be
added) mixture.  
Traditionally made
with pork, Sue made
the Chicken breast
special for my diet.  
Cooked and
chopped chicken
breast meat mixed
with sauted onion
slices.
Sauted Onion slices
to be added to
chicken.
Gently fold one side
over and slide on to
plate.
Serve "Lettuce Cup" style with
lettuce leaves - whole - mint
leaves, cucumber slices and
the sauce for dipping.

Sue's Famous Yellow Pancake - Specially Modified for Shannon!!
This looks like more of a "process" than it is.  It took
Sue under one hour to pull this all together.  I helped
a litle, but was mostly observicng and taking
pictures!  She made a total of (at least) 10 pancakes!!
