Apple - Pear - Blueberry - Fillo Cups
CUPS
Approx. 12 Sheets Thawed Fillo dough
Olive oil for brushing
Orange Juice for brushing
Brown sugar for sprinkling
FILLING
2 C apples, diced
2 C pears diced
2 Tablespoons Olive oil
¼ C Orange Juice
¼ C brown sugar
2 Tablespoons Honey
Blueberries fresh or frozen
Cut Fillo into 5x5 squares. Brush muffin tin with
oil. Combine olive oil and O.J. Place 1 Fillo square
on work surface. Brush square with mix &
sprinkle with sugar. Continue with 3 more
squares, layering squares at angles to form a
rough circle. Place in prepared muffin cups.
Continue filling all cups. Bake 350 for 10 minutes
or until golden. Carefully remove and cool on wire
rack.
Filling; Heat oil in large pot, add apples, sauté
for a few minutes then add pears, O.J., sugar
and honey. Cook until fruit is tender (10
minutes). Add blueberries at last minute. Fill
cups with warm filling. Serve with frozen yogurt
or granola topping!
