Super Layered Nachos

Layer chips in a single layer in glass 8x8 dish
Top with a little cheese

Repeat, chips, cheese, chips cheese.
Top the last layer with your "kicked up" beans, fresh sliced jalepeno,
tomaotoes and serve with the roasted salsa and fresh cilantro.

Kicked up beans are one can of whole pinto beans, drain, add a little
water (or beer), herbs, garlic, lemon, salt & pepper and jalepeno.  Let
simmer.

Make sure to wash kitty licks off!! He LOVES water!! So much that he'll
lick water off lettuce and veggies that I've washed, lots of re washing
goes on in my kitchen.


Bake for about 15 min in 350 oven. Watch so
the cheese doesn't burn.

The final product! Gorgeous Layered Nachos! Queso Fresco and
Cheddar cheeses were used here. Use your favorite cheese blend.


Super Bowl Chips and Roasted Salsa  

       Cut tortillas into triangles and toss with
olive oil.  Either:BAKE in a pre heated 350 oven
for 15 min. or until toasty OR, Pan FRY in one
inch of vegetable oil until crispy and golden.

       Season with salt or chili lime salt upon
removing from oil or oven.


SALSA
2 large jalepenos
1/2 lb (or so) tomatillos
1 lb (or so) roma tomatoes
Garlic either fresh or roasted
We don't do onion, but some onion would be good
here, again either roasted for a more mellow
sweeter taste or raw for a crunchy texture/bite

A handful of fresh cilantro

METHOD:

Roast tomatoes, tomatillos and jalepenos in hot
oven until "melty".  Takes about a half hour.

It's important to have a bull dog watching over
the progress!

Let cool a little and mix all ingredients together
in a f
ood processor, pulse until rough.

Serve with your tortilla chips. Enjoy!

Description: Chips and Dips are what make the Super Bowl SUPER.
Nothing wrong with that.... Make your own chips and they will be lower in fat than those you buy. Use white corn for a
great subtle flavor. I made half "fried" and half baked. The baked were just as good as the "fried". Try these next time
you have a surplus of tortillas. Flour work well too. Whole wheat flour also have a good flavor.
You can also serve
this salsa over sour cream or cream cheese.  This salsa is also great added to the roasted tomato hominy soup
recipe. Very versitile recipe. Top your chicken, beef or fish with this sweet but spicy delicious
-ness.
       My "kilbasa-wich".  Gavin loved it! I used Trader Joe's Turkey
Kilbasa which is very lean.

Take a sandwich roll and split it. Hollow out the bottom to make a cavity.

Spread with homemade or favorite tomato or marinara sauce.

Top with grilled split kilbasa, roased peppers and tomatoes.

Top with cheese, I only had the yellow cheddar on hand, but provolone
would be perfect.

Put in oven to melt cheese. Serve hot and with lots of napkins!
     Pesto Pita Chips

Spread homemade pesto on chips

Bake for about 15 min in 350 oven. Watch so they don't burn.

I didn't get a picture with my hummus, but I doctored up a store bought
hummus with olive oil and paprika.

The pita chips will keep for a few days in a zip lock baggie or a
tupperware container.

The chips are good with salad, chicken, even with salsa, like bruschetta
style. Very low fat and a good whole wheat alternative to potato chips.
