Shan's Way with Sweets...It's in the blood!
This is my family's famous Pumpkin Chocolate
Chip Cookie!  Soooo good!!! They are like little
cakes, very moist and delicate. They look like
little muffins in my picture. I made them around
Thanksgiving time. An easy to follow recipe.
Hello there you wish to have some cookies?  Well here
you are:

the pumpkin cookie

1/2  cups shortening
1 1/2 cup sugar
1 egg
1 cup pumpkin (not pie filling, just plain pumpkin)
Cream all the above together

2 1/2 cups flour
1 tsp each of baking soda, baking powder
1/2 tsp salt
1 tsp cinnamon, & vanilla
1 cup chocolate chips
1 cup nuts if you wish
Mix all together and add to cream mix.

Bake at 375 for oh about 8 to 12 minutes  the trick is not
to over bake them.

made a batch with splenda for my non sugar eating
friends. They were also just as good. I used mini chips.
