



Super Lean Chicken and/or Veggie Lasagna
Makes 2 big pans, 13x9"
Read it all the way through first.
Shopping/Ingredients for 1 chicken, 1 veggie. yield 2 large pans/Approx. 8 servings each
2 Pkgs Lasagna Noodles
MARINA SAUCE
2 28 oz cans TJ’s marinara sauce OR, 1 28 oz can crushed tomatoes and
1 28 oz can tomato sauce
one small can tomato paste
if using can tomatoes instead of pre made marinara sauce, add:
½ White onion - small dice
1 garlic clove - minced
2-3 T italian seasoning blend (basil, thyme, parsley, garlic,….)
A splash of red wine
A squeeze of fresh orange (add this even to the canned marinara sauce)
Reserve 1 cup of sauce into measuring cup for topping off dishes
3 CHEESE BLEND – use for both pans – combine and mix all ingredients
16 oz Ricotta cheese, 2 cups part skin ricotta
8 oz cottage cheese, 1 cup knudsen small curd low fat
4 oz skim milk mozzarella cheese, ½ cup shredded,
I used veggie shreds mozzarella blend
1 lareg egg WHITE
4 fresh basil leaves, julienned
CHICKEN - for one whole pan
2 lbs cooked chicken meat (2 Large breasts), sauté in olive oil and top w/ red wine, cover to finish
cooking. Cool.
Chop/grind in chopper to desired consistency with a
tiny pinch/5 seeds of whole cumin, celery seed tiny
pinch, pinch of cayenne, 3 cloves fresh garlic.
VEGGIES (use for one whole pan)
Saute or grill with olive oil your choice/blend of
the following; mushrooms, spinach, red pepper,
onion, brocoli, eggplant…With garlic
METHOD
Make sauce; Saute diced onion, garlic in olive oil for 3-4 min.
Add can of crushed tomatoes, tomato sauce and paste,
Add about 1/8 C red wine
Add a good squeeze of fresh orange
3 CHEESE BLEND – Blend all together see above. use for both pans – combine and mix all
ingredients
Saute Veggies in EVOO w/ garlic
Boil Noodles with salt and olive oil, drain, rinse set aside.
Reserve 1 cup of marinara sauce into measuring cup for topping off dishes
Combine ½ of sauce into chicken – mix well
Combine other half with veggies
Boil Noodles 1 ½ packages good for 2 pans
Prepare pans: Spray with oil spray. 1 for chicken 1 for veggie
Heat oven to 350.
Spoon 1/3 of sauce into bottom of each pan, 1 with veggie sauce, 1 with chicken sauce
Top with 3-4 noodles
Spoon 1/6 of cheese mixture on top of noodles
Spoon more sauce on cheese
2nd layer of noodles
2nd layer of cheese
3rd layer of sauce (at the beginning divide your veggie and chicken
sauces into 3rds)
3rd layer of noodles
Top 3rd layer of noodles with reserved sauce…. More or less depending on taste.
Cover and bake 40 min.
Uncover, top with more cheese if desired, and bake an additional 10 min.
Let set up for about 10 min before cutting into and Enjoy!
