follow the pictures! G really liked my pies,
especially since I kept them kind of "dry".
He doesn't like things too "saucy". The
photo at the end of the completed dish
includes some extra sauce I poured on. I
like mine extra saucy! Just like me! I hope
you make your own pie and let me know how

Assemble the ingredients

Basic Pot Pie Ingredients.... peas,
mushrooms, green beans can also be used.
Saute garlic in 3 T olive oil and 2 T
butter. Add 4T flour to make a roux.
Season roux generously with s&p.
Add veggies and chicken. Potatoes have
been par boiled. Carrots should be too.
Cold pastry divided into equal amounts.
Press larger pieces into bottoms
saving smaller pieces for the tops.
Bake off bottom crusts. I forgot to poke
the bottoms with a fork. Start filling.
Put tops on. Don't over fill. I kept
them kind of "dry" and served more
filling on the side.
Aren't they cute?!? Let them cool for a few minutes and gently remove from pan. Crust is flaky, be gentle. If they cool all the way in the pan, they are impossible to keep in tact.

show Sara Moulton was making
Chicken Pot Pie!!!! weird.... It was
very similar to mine, but she used a
separate pan to sauté the veg and
make the roux, where I used just one.
These were super easy to make and
are great to take for lunch the next
day. They heat up great in the micro,
add a little salad and you're good!
