Next Day a GREAT SANDWICH!

Veggie Fritata
Heat oven to 350.
Coat bottom of a 12" non stick skillet with olive oil.
Place zuchini in pan in a layer season with salt
and pepper.
Add Pepper, onion and saute until tender.
Beat eggs with soy milk and pour over veggies.
Let the bottom set.
Pull the sides to the center to allow more to be
cooked on the bottom. Cook for aprox 5 minutes
on the stove top on low, don't let bottom burn!
When the bottom layer is "pretty set", layer the
tomatoes on top and top with cheese.
Place in hot oven for approx 5 minutes until top is
set up.
Let it set at least 5 minutes before serving.
Can be served directly from the pan.
Makes great egg sandwiches the next day!!

1 Medium Zuchini Sliced thin
1/4 of a Red or Orange Bell pepper
diced
1/4 of a red onion diced
8 eggs (or 12 whites or a combo of
both)
1/4 C soy milk
1 small tomato sliced in rounds
A little bit of Italian cheese blend
Olive Oil
